Beer Was Just the Start
If you've spent any time at Pee-Pa's Garage, you know we don't do anything halfway. The brewery started as Jim Brown's question, "why should I have all the fun?", and turned into Pinellas Park's favorite Wednesday-through-Sunday hangout.
The distillery is the natural next step. Same building, same family, same blue-collar attitude. We're hand-building our spirits the way we hand-built the brewery, slowly, carefully, and with no shortcuts.

We're focused on doing a few spirits right: our own moonshine, ready and pouring now, a bourbon aging in oak for the moment it's ready, and small-batch whiskey on the way. All of it made by people who learned to do this because they love the craft, not because they were chasing a buck.

Bourbon
Florida-aged corn whiskey resting in new American oak. Caramel, vanilla, brown butter, the headline pour we're patient for. It's also the heart of our limited Founders Blend.

Our small batch whiskey and flavored whiskeys, available soon at the bar and for retail sales. Made in the same craft mindset as everything else we pour.

Our bartenders shake and stir craft cocktails built on our own moonshine and the spirits coming off our still, no anonymous well liquor here. Not drinking tonight? We pour craft NA drinks and house mocktails too, so everyone gets something special in their glass.
Served the Pee-Pa's way: ice-cold, in a mason jar, with a fresh citrus wheel. Stop in and ask what's mixing, the cocktail list changes with what's fresh and what Andrew's been experimenting with.

Three Steps, No Shortcuts
The hardest part of small-batch distilling is the willingness to wait. We don't rush a single one of them.
Ferment
Same grain quality and water care that goes into our beer. Andrew's brewing background means every batch starts on a clean, solid ferment.
Distill
Small-batch column and pot distillation. Every cut is made by hand. We're not chasing volume, we're chasing the right pour.
Age & Bottle
Some spirits go straight to the bottle. Bourbon and whiskey spend their time in oak. When it tastes right, it gets a label. Not a day before.
